Chicken Enchiladas Recipe
Chicken enchiladas are a classic Mexican dish made with soft tortillas filled with shredded chicken and cheese, and smothered in a spicy tomato sauce. Ingredients:
- 8 corn tortillas
- 2 boneless chicken breasts, cooked and shredded
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 1 can of enchilada sauce
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Fresh cilantro, chopped (optional)
Instructions:
- Preheat the oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- In a large pan, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened, about 5 minutes.
- Add the cooked and shredded chicken to the pan, and season with salt and pepper to taste. Cook for 2-3 minutes, until heated through.
- To assemble the enchiladas, lay a tortilla flat on a plate. Spoon about 2 tablespoons of the chicken mixture down the center of the tortilla, and sprinkle with some of the shredded cheese. Roll up the tortilla tightly, and place it seam-side down in the prepared baking dish. Repeat with the remaining tortillas and filling.
- Pour the enchilada sauce over the rolled enchiladas, making sure they are completely covered. Sprinkle the remaining cheese over the top.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and the enchiladas are heated through.
- Remove from the oven, and let cool for a few minutes before serving. Garnish with fresh cilantro, if desired.
