  • 8 corn tortillas
  • 2 boneless chicken breasts, cooked and shredded
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1 can of enchilada sauce
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (optional)


  • Preheat the oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  • In a large pan, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened, about 5 minutes.
  • Add the cooked and shredded chicken to the pan, and season with salt and pepper to taste. Cook for 2-3 minutes, until heated through.

  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and the enchiladas are heated through.
  • Remove from the oven, and let cool for a few minutes before serving. Garnish with fresh cilantro, if desired.
