Chicken Fettuccine Alfredo Recipe

Ingredient

  • 5 tbsp salt
  • 8 cups water
  • 200g Fettuccini Pasta
  • 2 tbsp oil
  • 1 tsp pepper
  • 1 tsp salt
  • 6 chicken thighs cubed
  • 1 tbsp butter
  • 1 tsp mushroom
  • 1/4 cup butter
  • 1 onion diced
  • 3 cloves garlic diced
  • 1.5 cups 10% cream
  • 1 tsp italian seasoning
  • 1 tsp salt
  • 1 tsp black pepper
  • 1.5 cup of grated parmesan cheese

Instructions

  1. Start by putting a generous amount of salt into a pot of boiling water. Add the fettuccine pasta and cook for 9 minutes or until al dente. Drain the pasta, but reserve about 1 1/2 cups of the pasta water.
  2. Season the chicken thighs with salt and pepper. Heat a skillet over medium heat and add 2 tbsp. of butter. Once the butter is melted, add the chicken to the skillet and cook until browned on both sides. Remove the chicken from the skillet and set aside.
  3. Using the same skillet, add the sliced mushrooms and cook until browned. Remove the mushrooms from the skillet and set aside.
  4. In the same skillet, add 1/2 cup of unsalted butter. Once the butter is melted, add the finely diced onions and cook until translucent. Add the finely chopped garlic and cook for another minute.
  5. Reduce the heat to medium and add 1 1/2 cups of half-and-half to the skillet. Add 1 tsp. of Italian seasoning, a pinch of black pepper, and a pinch of salt. Stir the mixture until the cream has thickened.
  6. Add 1 1/2 cups of grated Parmesan cheese to the skillet and stir until the cheese has melted.
  7. Add the cooked fettuccine pasta to the skillet and toss until the noodles are coated in the sauce. Add the reserved pasta water, 1/4 cup at a time, until the sauce has reached your desired consistency.
  8. Serve the pasta in bowls and top with the cooked chicken and mushrooms. Garnish with additional grated Parmesan cheese, if desired.
